Easy Weeknight Chicken Thighs

Ingredients
- 2 lb boneless skinless chicken thighs
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp oregano
- 1/16 tsp cayenne pepper (optional) or a few dashes of your favorite hot sauce
Instructions

Preheat oven to 350F

In a small bowl, combine Dijon mustard, honey, olive oil, salt, pepper, oregano, and cayenne pepper.

Place chicken on a greased cookie sheet or baking pan. Pour the sauce over it. Make sure it is evenly coated.

Bake chicken uncovered for 30-40 minutes, until the top is golden and the internal temperature of the meat is 165F.
